How To Make Khao Soi Chicken (Gai)

Heat oil in a large pot over medium-high heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set it aside. 5 min
In the same pot, add shallots, garlic, and ginger and cook until softened, about 2 minutes. Add the curry paste, turmeric, cumin, and coriander and cook. 2 min
Stir in the coconut milk, chicken broth, fish sauce, palm sugar, soy sauce and salt. Add the cooked chicken back to the pot and bring the mixture to a boil. 5 min
Reduce the heat to low and simmer for 15-20 minutes. Adjust seasoning to taste. 15-20min
To serve, divide the cooked egg noodles among 4 bowls. Ladle the hot curry over the noodles. Garnish with pickled mustard greens, lime wedges, thinly sliced shallots and chopped cilantro. Do not forget some chilis. 1 min
