- In a medium bowl, combine the cooked and shredded chicken, mayonnaise, mango chutney, curry powder, salt, and pepper. Stir until well combined.
- Spread a generous amount of the coronation chicken mixture onto two slices of bread.
- Top with lettuce, tomato, and cheese, or any preference.
- Top with the remaining two slices of bread to form a sandwich. Tip: Later grill the sandwich, amazing!
